A Sweetly Guilt-Free Dessert

Most people think that saying “good-bye” to sugar means saying “good-bye” to desserts. Well, I say not so!

These desserts are not only sweetly delightful on your tastebuds, but full of nutritional ingredients.

What initially put me off attempting any of these was firstly, lack of fancy ingredients like “agave” and “coconut oil”, and secondly lack of time. But, what I discovered when I decided to give it a go anyway, was that some of these are surprisingly simple and I easily substituted with what I already had in my cupboard.

 

Forest Berry Ice Cream

What a treat, bet you thought you’d have to say goodbye to ice-cream for good right?! An ice-cream maker is useful but not essential and get this; you can even make it vegan! Just swap out the milk and cream for coconut milk and coconut cream.
Sprinkle berries over the top to make it extra special.

 


Ingredients:

  1. 350g  Frozen Berries
  2. 4oz Honey
  3. 4oz Maple Syrup
  4. 1/4 pint Milk
  5. 300 ml extra thick double cream

Method:

Blend the berries with milk, honey and maple syrup until smooth. Whisk cream until stiff then stir into the berry mix.
If you have an ice cream maker, this will be the time to pour the mix into the pre-frozen beakers and switch on the mixer for around 20 – 30 minutes until desired consistency has been reached. Scoop into tub and pop into the freezer.
If not, pour into your ice cream container and pop in the freezer for 20 – 30 minutes until semi-frozen then blend to break it up. Pop back into the freezer to enjoy when you are ready!


Chocolate, Coconut & Peanut Fudge

 

When there’s a ton of doughnuts and brownies everywhere you turn, you need something truly special to ease those cravings. This tasty treat really hits the sweet spot whilst actually being good for you!


Ingredients:

  1. 200ml Coconut Cream
  2. 100g Desiccated Coconut
  3. 100g Peanut Butter
  4. 3 tablespoons Cocoa Powder
  5. 2oz Honey
  6. 1oz Maple Syrup

Method:

Blend desiccated coconut until fine. Add honey, maple syrup, coconut cream, peanut butter and cocoa powder and blend stirring occasionally to ensure an even blend.

Pour into a shallow, foil-lined tin and spread evenly. Dust with cocoa powder and pop into the freezer for 30 minutes. Slice into squares and keep refrigerated.


Yoghurt with Fruit & Maple Syrup

Also an option for breakfast, but I love it for dessert. My favourites are strawberries and mango for hitting my 5-a-day in the form of toppings.

Mango & Coconut Yoghurt


Ingredients:

  1. Greek Yoghurt
  2. Fruit of your choice
  3. Maple Syrup

Method:

Add yoghurt to a bowl, top with fruit, drizzle maple syrup. Sprinkle with desiccated coconut, freeze-dried raspberries or any of your favourite sugar-free toppings. Simple, but so good!


 

Watermelon Fruit ‘Cake’

Whether you have a special occasion coming up or you just want to make exotic fruit look extra fancy, this tasty treat is certainly eye-candy!


Ingredients:

  1. 1 Watermelon
  2. 1 Honeydew Melon
  3. Blueberries
  4. Kiwi
  5. Strawberries

Method:

Slice the watermelon straight across just over halfway and carefully carve the skin off the larger half. Cut Shapes out of the honeydew melon and slice the kiwi and strawberries. Line up the blueberries on a skewer and top with the melon shapes. Top the watermelon with the kiwi and stand the skewers through the top. Arrange the remaining strawberries around the edges.


 

I hope you have enjoyed these sweet but totally free-from added sugar treats. Some of these can also be enjoyed at breakfast time or as a lunchtime snack, so be sure to indulge no matter the time!
